Feta Kielbasa "One-Pan Meal" August 28th, 2023

This flavorful "almost" single-pan dish is easy to make. Boiling the potatoes, in a separate pot, will reduce the overall cook time.

Ingredients:

1 lb Gold or Red Potatoes, sliced into coins 1/4 inch thick
1 Teaspoon Salt
1 Tablespoon Butter
4 Tablespoons Olive Oil, divided
1 Package (14 Ounces) Kielbasa, sliced into coins 1/4 inch thick
1 Zucchini
10 Ounces Brussels Sprouts, cleaned and quartered
1/2 Red Onion, cubed
1 Red Bell Pepper, cubed
1 Green Bell Pepper, cubed
1 Teaspoon Garlic Powder
8 Ounces Feta Cheese

Directions:

Place the Potatoes into a pot. Cover with water.
Add Salt.
Bring to a boil for 5 minutes.
Remove the Potatoes from the heat.
Drain and rinse in cold water.
Dry the Potatoes, using a paper towel or clean kitchen cloth.

Rinse the par-boiled Potatoes in cold water.
Dry with a paper towel or clean towel.
Heat a medium sauté pan to medium high heat.
Pan fry the Kielbasa coins until lightly browned.
Remove from pan and store in a small bowl.
Melt the Butter. Add the Olive Oil.
Add the Potatoes, stir well.
Cook covered for several minutes, until the Potatoes are lightly browned.
Stir the Potatoes, ensuring that each coin is flipped.
Cook again, until lightly browned on both sides.
Remove from pan and store in a medium-sized bowl.

Use a vegetable peeler to cut the Zucchini into thin slices.
Add another splash of Olive Oil.
Grill Zucchini until lightly browned.
Remove from pan and store in the same bowl with the Potatoes.

Place 1/2 Tablespoon Olive Oil into the pan.
Add the Brussels Sprouts to the pan.
Lid and sauté for about 5 minutes.
The Sprouts should turn a brighter green and the bottoms should begin to brown.
Remove the lid and continue to cook another 2 or 3 minutes, until the cut sides are well browned and an inserted fork offers no resistance.
Remove from pan and store in the same bowl with the Potatoes and the Zucchini.

Place 1/2 Tablespoon Olive Oil into the pan.
Add the Red Onions to the pan.
After about 2 minutes, stir well, then add the Red and Green Bell Peppers.
Sauté for 2 minutes, stirring occasionally.
Sprinkle the Onion/Pepper mixture with Garlic Powder.
Stir well. Add the preciously cooked Vegetables and the Kielbasa.
Stir well. Sprinkle with the crumbles Feta Cheese.
Lid and reduce the heat to medium. Simmer for 2 minutes.

Serve and Enjoy.
